Blueberry Buckle

There are approximately 2700 acres in blueberry production in Mississippi with the majority of blueberry acreage in the Southern half of the state.  Fresh blueberries are available in the market place from May through September with June and July being the peak harvest season.

Approximately 50% of Mississippi blueberries are sold wholesale through marketing cooperatives. The remaining blueberries are sold on a pick-your-own basis or sold independently through farmers markets, small stores, etc.

Enjoy blueberries fresh or freeze to enjoy year round. Do not wash the berries before freezing.. Freeze dry in freezer containers. Wash them right before using them in your favorite recipes.

Blueberry Buckle

3/4 cup sugar

1/4 cup shortening

1 Egg

1/2 cup whole milk

2 cups all purpose flour

2 teaspoons baking powder

1/2 teaspoon salt

2 cups fresh blueberries

1/2 cup sugar

1/3 cup all purpose flour

½ teaspoon ground cinnamon

1/2 cup butter, softened

Preheat oven to 375 F.  Grease an 8×8 inch pan.  Cream together ¾ c. sugar, shortening and egg.

In a separate bowl, mix together 2 c. flour, baking powder, & salt.  Stir flour mixture into sugar mixture alternating with milk.

Stir in blueberries.  Pour into prepared pan.

Make topping: Combine ½ c. sugar, 1/3 c. flour, cinnamon and butter.  Sprinkle over batter.

Bake for 25-30 minutes.
