Northwest Mississippi is proud to be home to the majority of rice producers in Mississippi. In 2015, the rice crop contributed $132 million in value to the state’s economy and accounts for thousands of jobs, both on and off the farm. Rice also ranks among the state’s top agricultural exports.
Rice is nutritious, economical, blends well with any food pairings and is easy to make. Best of all, rice is cholesterol-free, sodium-free and has no trans or saturated fat. Rice is also gluten-free and is the least allergenic of all grains.

Brown Rice Waldorf Salad
¼ c. vanilla low fat yogurt
½ c. reduced calorie mayonnaise
¼ t. salt
¼ t. ground cinnamon
3 c. cooked brown rice, cooled
2 medium tart apples, cored & diced
1 ¼ c. coarsely chopped celery
1 medium carrot, diced
¾ c. chopped walnuts or pecans
¾ c. raisins
Assorted fresh fruit for garnish (optional)
Blend yogurt, mayonnaise, salt and cinnamon in a large bowl.
Add rice, apples, celery, carrot, walnuts, and raisins.
Mix well. Garnish with fresh fruit if desired.
