Do you know what a “goober” is? That’s just another name for peanuts here in the South.
We love growing peanuts on our 128 family farms. They are so nutritious and tasty. Peanuts are loaded with protein, healthy fats and other nutrients.
In 2017, we grew 189 million pounds of peanuts that brought in $33 million value of production to our state’s economy.
Peanuts are great a variety of ways and are most commonly used as peanut butter as well as roasted or boiled.
COOL REFRESHING PEANUT PARFAIT
Clear plastic or glass container:
1 cup lemon or vanilla yogurt (nonfat or low fat)
1 cup total of your favorite fruits (e.g. blueberries, strawberries)
4 teaspoons of peanuts, whole or chopped
Wash fruit under cool running water.
Carefully chop or slice into bite-sized pieces.
Measure 1/4 cup of yogurt and place in the bottom of your cup.
Place 2 tablespoons of fruit on top of the yogurt.
Place 1 teaspoon of peanuts on top of the fruit.
Repeat the steps above, layering yogurt, fruit and peanuts until you reach the top of your cup.
