Pineapple Pilaf

Rice has long been loved for its versatility and economical nutrition. It compliments a wide variety of foods and is a great stand alone side dish.  Rice is also the least allergenic of all grains.

Eight counties in Northwest Mississippi are proud to be home to the majority of the 259 rice farming families in Mississippi. Bolivar County was the top producing county in 2017.

Thousands of jobs, both on and off the farm are provided by rice farming. Rice ranks among the state’s top agricultural exports.

In 2017, rice contributed $105 million value of production to the state’s economy. 

PINEAPPLE PILAF

1 Tablespoon Butter

1 cup green onions, sliced

½ cup walnuts, chopped

½ cup raisins

½ teaspoon salt

½ teaspoon ground ginger

3 cups cooked rice

1 (8 ounce) can pineapple tidbits, drained

Heat butter in large skillet over medium heat.

Add onions, walnuts, raisins, salt and ginger. Cook and stir 4 to 5 minutes or until onions are tender.

Add rice and pineapple.  Stir and heat thoroughly.
