I remember as a girl trying to catch a piglet in a pen. Those are slippery little things. I failed miserably but thank goodness I don’t have to do that today to enjoy Mississippi farm raised pork.
Farm families on 306 hog farms raise healthy animals so we can enjoy a variety of pork including ham, chops, bacon & sausage. In 2018 those hog farms brought in 94 million value of production.
Here’s a great recipe for Sausage Squares. They’re wonderful for breakfast, brunch or even breakfast for dinner.

2 cups buttermilk baking mix
1 pound bulk sausage, pre-cook & drain well
1 ½ cups sharp shredded cheese
¼ cup sour cream
½ -1 teaspoons garlic powder
½ cup finely chopped onion
½ cup grated parmesan cheese
1 egg beaten
2/3 cup milk
Salt/pepper to taste
Mix together & put in 9×13 pan. Bake 350 for 25-30 minutes.
