Mississippi Sweet Potatoes

Sweet potatoes are not yams although in the South we use the words interchangeably. Both are edible roots but yams are not as nutritious as sweet potatoes and not grown in the USA.

Did you know that in 2018, Mississippi Farm Families grew sweet potatoes on 29,000 acres that yielded $118 million value of production? That’s $4 million above the previous year!

Our farm families work hard to bring you sweet delicious & nutritious sweet potatoes.  Here’s a recipe for an old farm favorite, Sweet Potato Cobbler.

Sweet Potato Cobbler

Melt 1 stick butter in a large 9×12-inch baking dish.

MIX:

1 cup self-rising flour

1 cup sugar

1 cup milk

Pour into center of melted butter. DO NOT STIR.

MIX:

2 cups sweet potatoes, cooked but firm, peeled and cut into bite size pieces

1 cup sugar

1/2 cup light brown sugar

1 1/2 cups water

1 teaspoon vanilla

1 teaspoon cinnamon or preferred spice

Pour this into center of melted butter and batter. DO NOT STIR.

Bake at 350 degrees for 45 minutes or until light brown.
