Tortilla Chip Chicken Casserole

Families on 1,430 Mississippi farms raised healthy chickens for their families and yours.  A lot of misinformation has been circulated about how chickens are raised.  Let’s clear up 2 pieces of misinformation at one time.  No hormones and No steroids are used in raising chickens. Federal regulations strictly prohibit their use.

Chicken is one of the healthiest meats and economical sources of protein for family meals. In 2018 poultry brought in 2.68 Billion dollars value of production to our state’s economy. That’s 100 million more than in 2017.

Tortilla Chip Chicken Casserole

2 cups shredded cooked chicken

2 cups shredded Mexican cheese blend (divided in half)

1 (10 oz) can cream of chicken soup

½ cup milk

½ cup sour cream

1 can Ro-tel tomatoes (drained)

½ packet taco seasoning

1 large bag flavored Tortilla chips

Shredded lettuce and Diced tomato (optional)

Pre-heat oven to 350 degrees. In a large bowl mix together shredded chicken, 1 cup of cheese, cream of chicken soup, milk, sour cream, Rotel tomatoes, and taco seasoning. Mix well.

Grease a 2-quart casserole dish, and add a layer of crushed chips across the bottom.

Top with a layer of the chicken mixture. Add another layer of crushed chips, and then add another layer of the chicken mixture.

Top with remaining cheese. You can add more crushed chips on top as well if you wish.

Cover with foil or casserole lid.

Bake for 30-35 minutes until bubbling hot. Remove from the oven and top with lettuce and tomato if you choose. (Makes 4 Servings)
